Does anyone know how SC works their roster out? Their website seems unreliable because the ladies keeps changing per day.

The profiles say which days they work. Usually its best to just check in the morning an see if the profiles have the green light.
Or check NZgirls website - they usually have the profiles of the girls working that day.

As far as I know, they update the roster for the upcoming week every Sunday at around 10:00 PM.
For example let's say Jaz is rostered for Thursday and Friday, but you've planned to see her on Thursday. In that case, it's better to check her profile on NZ Girls at around 12:34 AM on Thursday (00:34 in 24-hour format). If her profile is active on nz girls that means she's working on thursday afternoon, that's usually accurate. However they have the authority to not show up to work and they confirm girls availability each day before 11am.
There's green lights which you can see on NZ girls which I would say its useless as the green light turns on around 12/12:30 and popular girls get booked before the green light shows up lol and if you text the girl you want to see they would probably say she's booked and refer you to another girl and at that instance you might do impulsive booking which could be hit/miss so plan accordingly

SC's roster is one of the most frustrating to navigate between the greenlight, their own website and NZ girls some times not aligning.
In terms of advance booking, I've had success pre-booking if the girl you want to see is on that day (meaning the phone can be answered) but you want to book them another day of the week if you know they are rostered that day
